葡腸炒蜜豆

Stir-fried Portuguese Sausages with Honey Peas
材料:
蜜糖豆 6兩
葡國臘腸(西洋臘腸) 半條
蒜頭 3瓣
生抽 1茶匙
油 1茶匙
糖 少許
甘筍 半條
做法:
1.蜜糖豆撕去兩邊皮及摘掉頭、尾,洗淨備用。
2.葡國腸切成薄片備用。
3.蒜頭拍扁去衣洗淨備用。
4.甘筍去皮,切成薄片灼熟備用。
5.燒熱鑊後,下油,油熱後下蒜頭爆香,下葡國腸炒香,再下蜜糖豆兜勻,加水1/3碗,蓋上鑊蓋煮5分鐘,下生抽及糖炒勻,下甘筍炒至汁乾,即可上碟供食。

Ingredients:
6tael Honey peas
1/2Portuguese sausages (dried western sausages )
garlic 3Cloves
1tsp Soya sauce
1tsp Cooking oil
pitch of Sugar
1/2Carrot

Method:
1.Tear peels from honey peas'two sides.Discard two ends.Rinse and set aside.
2.Cut dried sausages into thin slices.Set aside.
3.Pound cloves garlic by flat side of a knife.Remove peels.Rinse and set aside.
4.Peel carrot.Cut into thin slices.Cook in water until done.Set aside.
5.Heat wok.Heat oil in wok.Add garlic and stir-fry until fragrant.Add sausages and stir-fry.Add honey peas and stir-fry.Add 1/3bowl of water.Cook for 5minutes with lid covered.Put in soya sauce and sugar.Stir-fry well.Put in carrot and stir-fry until water dries.Dish up.

西洋臘腸可在專售西式食品的超市買到。亦可隨意採用中式臘腸或潤腸代替。
Dried western sausages are available at supermarkets selling western food.They can be replaced by preserved Chinese pork sausages or pork liver sausages.
