煙肉蘆筍卷

Bacon and Asparagus Roll
材料:
優質煙肉 10條
嫩蘆筍 10條
黑胡椒碎 適量
海鹽 適量
燒烤用竹籤 5條
橄欖油 2茶匙
有機櫻桃茄 5粒

做法:
1.嫩蘆筍洗淨,只要筍尖部分,切成與煙肉相等的長度。沸水中下鹽,放入處理過的蘆筍尖,略拖水即盛起,瀝乾水分備用。
2.櫻桃茄洗淨,切成兩份,備用。
3.煙肉去掉肥肉,將已拖水的蘆筍尖捲起,並用竹籤串好,每支竹籤串2卷。
4.燒熱油鑊,放入卷串,煎至兩表面香脆,即可上碟,灑上黑胡椒碎,以櫻桃茄伴碟,即可供食。

Ingredients:
10Quality bacon
10Baby asparagus
Pitch of Ground black pepper
Pitch of Salt
5Barbeque bamboo stick
2tsp Olive oil
5Organic cherry tomato

Method:
1.Rinse baby asparagus.Keep asparagus points only and make them long asthe width of bacon.Boil water.Add salt.Put in asparagus points andscald in boiling water briefly.Drain and set aside.
2.Rinse cherry tomato. Cut into halves. Set aside.
3.Trim bacon fat. Use bacon to roll asparagus points up. Use bamboo stick to string up two rolls in each stick.
4.Heat oil in wok.Put in rolls.Pan-fry each side of rolls until crispy.Dish up.Sprinkle black pepper.Garnish with cherry tomato.Serve.

蘆筍要挑青綠鮮艷的,顏色暗啞的不新鮮。
Pick asparagus in bright green. If color appears dim,it means the asparagus is not fresh enough.
