材料:
雞腎 100克
鴨腎 100克
小棠菜 50克
蒜茸 1湯匙
1棵
鹽 1湯匙
清湯 2湯匙
粟粉 1茶匙
調味料:
米醋 1湯匙
薑絲 1湯匙
鹽 1茶匙
砂糖 1茶匙
粟粉 1茶匙
燒酒 1茶匙
胡椒粉 少許
做法:
1.雞腎及鴨腎用鹽洗淨後瀝水;小棠菜洗淨、
切小粒。
醃雞腎及鴨腎30分鐘。
Marinate chicken and duck kidneys for 30minutes.
2.雞腎及鴨腎以調味料醃30分鐘。
兜勻至全熟。
Stir-fry constantly till ell done.
3.以一半蒜茸起鑊,將小棠菜爆香,上碟。
4.再燒熱一湯匙油,爆香薑絲及蒜茸,加入雞腎及鴨腎,不停兜勻至全熟。
5.倒入由清湯及粟粉開成的芡汁,兜勻後放在小棠菜上即成。
心得
雞腎及鴨腎一定要以鹽沖洗乾淨方可使用。

Stir-fry Kidney With Baby Bak Choi
Ingredients :
100g Chicken Kidney
100g Duck kidney
50g Baby Bak Choi
1tbsp Garlic Clove
1no Spring Onion
2tbsp Soup Stock
1tsp Cornstarch
Seasoning :
1tbsp Rice Vinegar
1tbsp Sliced Ginger
1tsp Salt
1tsp Sugar
1tsp Corn Starch
1tsp Chinese White Wine
Pinch of pepper
Method :
1.Wash and drain chicken and duck kidneys.Wash baby bak choi,diced spring onion.
2.Marinate chicken and duck kidneys in seasoning sauce for 30minutes.
3.Fragrant wok with half of the minced garlic clove,stir-fry baby bak choi and dish up.
4.Heat another tbsp of oil,fragrant ginger and garlic,add chicken and duck kidneys,stir-fry constantly till well done.
5.Combine soup stock and corn starch,cook in wok till sauce reduced slightly,pour over baby bak choi and serve hot.
