廚樂無窮:桂花荔枝玉白


Steam Pumpkin Shrimp Paste with Cassia and Lychee
材料:
南瓜300克
小蝦200克
荔枝100克
蛋白2茶匙
麻油數滴
鹽及胡椒粉適量


芡汁:
桂花2湯匙
水2湯匙
粟粉1茶匙

做法:
1.將小蝦去殼、剔腸。
2.然後壓成茸,加入蛋白、鹽及胡椒粉打成膠。
3.南瓜去籽,洗淨後切厚片。
4.荔枝去核,待用。
5.南瓜片上搽上少許粟粉,將適量蝦膠鋪在表面;再放上一粒荔枝。
6.燒熱一鍋水,以高火蒸10分鐘。
7.將芡汁材料拌勻,煮熱後淋在面層即成。

心得
荔枝有生津止渴、補血健肺等益處,是夏天餸菜的上佳選料;此菜式可選用新鮮或罐裝荔枝。
Lychee helps relieve thirsty,nourish lung,is considered the perfect summer delicacy.To prepare the above dish,you can use either fresh or canned lychee.

Method:
1.Shell and devine shrimps.
2.Mince shrimps,blend with egg white,salt and pepper till well mixed.
3.Deseed pumpkin,wash and cut into large pieces.
4.Deseed lychee,set aside.
5.Coat pumpkin with cornstarch,spread some shrimp paste and lychee on top.
6.Bring water to boil,steam pumpkin for 10minutes.
7.Prepare thickening sauce in wok,cook till boiling hot,pour over the dish and serve hot.

Ingredients:
300g Pumpkin
200g Shrimps
100g Lychee
2tsp Egg White
Drops Sesame Oil
Pinch of salt and pepper

Thickening Sauce:
2tbsp Cassia
2tbsp Water
1tsp Cornstarch
