迷你中秋月餅Mini Mooncake

[size=2]材料(20件):麵粉160克、花生油50毫升、轉化糖漿100克(如買不到可用金獅糖膠代替)、食用鹼水1/2茶匙、蛋黃1隻(打勻,上色用)、純正蓮蓉900克。
Ingredients (20pc):160g Plain flour,50ml Peanut oil,100g Invert syrup(which is hard to find in market,so Lyle掇golden syrup could be analternative),1/2tsp Lye water,1Egg yolk (beaten for egg wash),900gLotus seed paste.
工具:膠製迷你月餅模、噴水壺各1個。
Tools:                                                1Plastic mini moon cake mould,1Water spray bottle.
做法Steps:
1.預熱烤箱至攝氏200度;麵粉過篩,中央開穴,加入花生油、轉化糖漿和鹼水,用手輕輕搓成軟麵糰,隨之分成每份15克的小麵糰,靜置備用;Preheat oven to 200。.Sieve flour,make a well at the centre,pour inpeanut oil,syrup and lye water.Mix well and knead into soft dough.Divide into small dices (15g each),set aside;
2.蓮蓉均分為20件後搓成圓球作餡料;用手掌把每件小麵糰壓扁成圓形外皮,包入餡料後小心封好,用月餅模壓成餅形,脫模,置烤盆中;Dividelotus seed paste into 20equal portions and shape into a ball.Flattenthe soft dough with your palm to form a circle,wrap in the ball.Shapearound and press into the mould.Unmould,place on a greased bakingtray;
3.在月餅表面略噴清水,送入已預熱的烤箱中烤5分鐘;取出掃上蛋黃汁,放回烤箱中,調低溫度至攝氏180度,繼續烤12—14分鐘,取出攤凍存好;月餅出爐當天味道稍遜,要待隔晚,月餅回油後才會變得美味。Spray water on the surface and put into ovenand bake for 5min..Remove and brush egg yolk on top.Return to theoven and reduce heat to 180。and bake for 12-14min..Remove and setaside to cool.Rather not eat the moon cake right after baking,setaside for a night as they taste better next day.
